Tamarind Rice


Tamarind Rice



Ingredients to prepare puzhigora powder:

    Coriander seeds - 11/2 tablespoons

     Red dried chilis - 6
     Pepper - 1 spoon

     Jeera - 1 spoon
     Sesame seeds - 1 spoon
     Curry leaves - 4 tablespoons


Procedure:

     Fry the above ingredients without oil  until it releases its natural aroma.
     Powder the mixture in the mixer.


Ingredients to prepare tamarind paste:

   Thick tamarind pulp - 4 cups
    Red dried chilis - 10
    Bengal gram - 1 tblspoon
    Curry leaves - 3 tablespoons
    Mustard - 1 tablespoon
    Asafoteda 
    Turmeric powder - 2 spoons
     Gingely oil - 200 gms.(Add more if required)
     Salt - as required


Procedure:

  Add oil to the pan 
  Add mustard,red dried chilis,curry leaves,bengal gram and wait till it sputters
  Add turmeric powder and salt to the tamarind pulp.
  Add tamarind pulp to the mixture.Allow the content to get boiled until oil oozes out.
  Once oil oozes out,add puzhigora powder to the tamarind paste and allow it to boil again
  Boil the content until oil separates from the paste.
  Once the paste is ready, add salt to taste and mix it with the rice and serve it in bowl.
